Every TE potluck brings a veritable cornucopia of deliciousness… Thought we should share some of our favorite recipes that keep us fueled here. Team members, please email your recipes here to have them posted for all to enjoy. Here’s one to get us started:
- 4 large cloves garlic, minced
- 1 head cauliflower, cut into florets and steamed or boiled till soft
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup milk (almond, regular, whatevs)
- 1 can cannelini or other white beans
- 1/2c parmesan cheese
- up to 6-7 cups vegetable broth to desired consistency
Blend everything together, heat. I used an immersion blender (Cuisinart Smart Stick is the best immersion blender in the world) and sauteed the garlic a little first in cooking spray. This sauce is great over pasta, as veggie gravy (add oregano, nutmeg, other herbs for this), as a base for creamed greens, etc…
